PENDING NEW WORLD RECORD RED SHEEP

I have a sheep obsession, and this is BY FAR the most impressive to take a dirt nap in 2012

"This red sheep was harvested on one of our ranches near San Angelo. The ram scores 162 5/8 SCI and 413.2 TGR. Both of these measurements should be big enough to be the new record. He measures 42 5/8 X 42 1/8." This is all the info I have at this time

Buffalo Duck Brests

De-breast .clean and put in a zip-loc bag .Add lemon juice first ,A good squirt but not to much .Take about a shot glass full of your favorite hot sause , real buffalo hot sause is the best .Then one table spoon of honey and one table spoon of fresh basil . Put it all in the zip-loc bag and mix it up . Then put in the fridge for 24 hours or freezer until needed . Pan fry .Do not over cook .Medium rare is the way to go .This is good for 4 to 6 buffle breasts .

Like a Well Oiled Machine

I decided after a tough night on saturday to go out and see if I couldn't knock some ducks in the water. The ducks have been flying all morning so I got in around 6:30 not stressing about being ready at the crack of shooting light. I was standing twenty yards from the blind setting ringer deeks I look up to a pair or ringers coming in hot from the North, they swung downwind and I just stood there and these birds didn't care they were coming. I dropped a shell in the chamber of my A-5 and waited when they committed the drake paid for it with his life and went tumbling towards the blind, one shot one drake. I turn to make sure he was dead, and here comes a mess of ducks. at this point I still had 80% of my decoys still in the bag with only ten or so out. I made the decision that the rest of them was unnecessary and in a little over fifteen minutes I had my six ringers, and was on my way back to the truck. Monday's hunt I am sworn to secrecy about so no report at all but here are some pics first pic is a combined sunday and monday possession limit.

This weekend coming up is the final page of the South Florida Duck Hunting Chapter of my life so I intend to hunt it hard as I can.

New Duck Recipe

I found this and made it last night with some amazing results.



Pan Sauteed Duck Breasts with Orange Liquer and Black Cherry Sauce


10-12 wild duck breasts-no skin.
cajun poultry seasoning
4 Tbsps. Olive oil
1/2 cup finely diced onions
1 Tbsp. minced garlic
3/4 cup Orange Liquer
1~2 Tbsps brown sugar (if unsweetened preserves are used)
1/2 cup Black Cherry preserves
1 Tbsp. real lemon juice
1/4 tsp. dried thyme
1 stick of real butter cut into 8-10 pieces
salt and cracked black pepper to taste


To Cook:


Heat olive oil over Med. High heat in a 12" saute pan. place duck breasts on a baking sheet and pat dry with paper towels. season duck breasts on both sides with cajun poultry seasoning. Sear duck breasts (in two batches) 3-4 minutes per side and remove to a plate to rest. In the same pan, add onions and garlic, saute 4-5 minutes until onions are clear. Add Orange liquer and stir in until pan drippings are loose. Add lemon juice and pour in liquid on plate from resting duck breasts into the sauce pan-(do not add the duck breast yet!) reduce the liquid to 1/2 volume. Reduce heat to med. low, add Black Cherry preserves and brown sugar and stir to melt preserves. Add dried thyme and stir. cook 2 minutes, then add butter a few pats at a time and stir constantly until all is incorporated. Season to taste with salt and cracked black pepper.


To serve:


slice two breasts cross grain and fan out on a plate. cover the duck with the sauce, just enough...don't drown it in the sauce.
Serve with a side salad and a nice Pinot Noir!

Sunday Jan 15th Glades Report Limits





























Hunted mid day for limits, the Ringers were decoying like I have never seen. I in really late at about 9:30 figuring I would shoot a couple to give me enough between sat and sunday to have a nice teal and ringer dinner..... boy was I wrong. before the decoys were out there was 3 Ringers tipping over at about a thousand feet bombing the decoys. got two out of those three and they hit so hard they cartwheeled across the water. It slowed down after that for another 4 birds in the next 30 minutes and I cleaned my spent ammo out of the blind and rolled out to be home in time to go to a dinner with the girlfriend and a nice night on the town.


I am going to hunt both sat and sunday for the next 2 weeks to finish out the season.

Saturday January 14th STA Report




Hunted Sat morning for about three hours for a rather uneventful morning shooting three blue wing teal and loosing one with my partner putting the only bird he shot in the bushes, hunting was much slower than last week.
